21-Day Detox Day 13: Kale & Avocado Salad

I had a bit of a mishap today with my meals. I had made a slaw on Saturday (recipe not posted, and rightfully so) for lunch, but when I opened the container to eat it, it smelled rank. The slaw was primarily made with Spanish black radish, which has a very peculiar smell and after standing in the fridge for 2 days, that smell was unbearable. So I was stuck being absolutely hungry with nothing else to eat! Luckily, I have a Whole Foods about 10 minutes away from my office. I knew that I would be able to find something with clean ingredients that would be satisfying and tasty. I found a kale & avocado salad and some roasted sweet potatoes. I was able to find the recipe to the salad online:

Kale & Avocado Salad (from MindbodyGreen)
Ingredients
2 lbs chopped kale (make sure thick stem is removed and discarded)
½ lb red onion, diced
½ lb red bell pepper, diced
3 avocado
3 oz lemon juice
2 tsp salt
½ tsp black pepper

Process:
1. Mash the avocado pulp with the lemon juice, salt and pepper until well-combined and smooth. Or you can process together in a food processor.
2. Combine the avocado lemon mixture with the vegetables. It is actually easiest to use your hands to ensure that the kale is well-coated with the avocado dressing.
3.Taste and adjust seasonings. If you prefer a creamier texture, use more avocado.

The salad was pretty tasty, but I think the sweet potatoes were too sweet for me. They really spiked my blood sugar quickly and I felt jittery most of the afternoon. Normally, I wouldn't be aware of the feeling but since I'm detoxing, I'm pretty hyper-aware.

After work, I went to Dr. Melissa's office to sit in her Infrared Sauna. The sauna is part of the detox program. I was able to last about 35 minutes in there. She preferred that I do an hour, but I don't  I have the attention span to sit in a little hot room for that long without my IPhone. To meet her expectations, I needed reading material, and all I had were cookbooks that were lying on the floor of the backseat of my car. And reading cookbooks during a cleanse is torture. After the sauna, I just wanted to crawl into my bed and fall asleep, but unfortunately there was still plenty of work to be done!

For dinner, I ate the Spaghetti squash again with some salmon and sauerkraut. As you can probably tell by now, once I like something, I keep eating it until I can't stand it any more. I think that's the easiest way to get healthy: find 5-10 recipes you really love, get great at cooking them, and keep at it! You can always spice it up every once in a while, but essentially if you had that many down, you'd be set for a few months. And then you can find some new one's and start practicing some more. Do you have any favorite recipes you'd like to share or would like to see me make? Let me know!
