You are going to love my Cranberry Persimmon Relish. As you may recall, last week I had a Savory Thanksgiving Cranberry Sauce recipe, made with onions, prunes, and raisins. This week's recipe is more simple, having only 7 ingredients and it's also sweet. I hope you enjoy making this as much as I did creating it!
Cranberry Persimmon Relish
Ingredients:
1 tbsp Coconut Oil
4 small Persimmons
2 cups cranberries
2 red onions
1/4 apple cider vinegar & 1/2 cup water
1/2 raisins & 1 cup hot water
1 tsp ginger powder
Process:
1. Soak raisins in hot water for 10 minutes
2. Heat oil in the sauce pan and once melted add chopped onions
3.. Saute onions for 10 minutes until slightly brown and add chopped persimmons
4. Add ginger powder and raisins with soaking water
5. Add vinegar and 1/2 water
6. Simmer for 1 hour
7. Add cranberries and simmer for 20 minutes longer
8. Remove from heat and let cool
9. Prior to serving, put all ingredients into a blender or a Vitamix and blend on low so sauce remains chunky.
10. Serve & Enjoy!

This looks awesome ! What a good group of ingredients! I love persimmons.
ReplyDeletethis looks good, makes me crave for one.. Anyhow, talking about cranberries, did you know that aside from its good taste it has a lot of health benefits, like being considered as one of stomach cancer alternative treatment.
